Baked Figs with Dolcelatte Cheese , served with a Caper Dressing



Preparation Time: 10 mins approx
 
Notes: Historicaly the white looking  milk substance that oozes from the stalk of the fig when cut  was once used to treat tooth ache !

An asp was used to kill Cleopatra in 30 BC. the Asp was hidden in a basket of figs ! 

Romulus and Remus ( mythical founders of Rome ) were apparently suckled under a fig tree by the she wolf !!

Ingredients:


For the figs....
serves 4

12 fresh figs [allow 3 figs per person]
225g Blue Cheese e.g. Dolcelatto [cut into small cubes]
2 tblsp olive oil
Fresh ground pepper
12 fresh Bay leaves
35 ml Alan Coxon`s 15th century Old English Ale-Gar
Fresh ground Black Pepper


For the Caper Dressing

75 ml Alan Coxon`s Ale-Gar  Vinegar
2 tblsp Capers [drained and roughly chopped]
Fresh Ground Black Pepper
¼ finely chopped Rosemary
1 tblsp fresh chopped Parsley

 
Method:

Method

1] Preheat the oven to 200c or Gas mark 5
2] Carefully trim the stalk and slice a thin slither off the base of the fig
3] Using a small knife, make an incision at the top part of the fig cutting half way down
4] Turn the fig a quarter turn and make a second incision through the fig… complete all the figs in this manner
5] Open the fig gently and place on the baking tray
6] Gently stuff the cheese into the centre of the fig and re-close gently ..
7/ Drizzle the figs with a little olive oil,then the "Ale-Gar" vinegar, season with black pepper and place into a preheated oven at 200c for approx 5 mins, or until the figs have softened…but still holding their shape
Serve immediately with the caper dressing and a sprig of chives

For the Caper Dressing

75 ml Alan Coxon`s Ale-Gar  Vinegar
2 tblsp Capers [drained and roughly chopped]
Fresh Ground Black Pepper
¼ finely chopped Rosemary
1 tblsp fresh chopped Parsley

MethodMix all together and serve drizzled over the Figs.
