Seared Tuna Carpaccio

Ingredients:



 2tsp  garlic paste

 2 lemons, zest and juice

100ml extra virgin oil 

 450g tuna fillet skinned, very fresh

 4 tablespoons chopped parsley

 3 tablespoons chopped capers 

 2 teaspoons dried mustard powder 

 1 tablespoon Roman Vinaigre 



 
 
Method:

 1. Place all the ingredients (except the mustard) and add the tuna, cover and place in the refrigerator for 4-6 hours

 2. Remove from the bowl, and heat a pan

 3. Dust the mustard over the tuna and press down with the ingredients 

4. Place the tuna in the hot pan and sear on all sides for 2 minutes

 5. Squeeze over the lemon juice, remove from heat 

6. Wrap in cling film and place in the freezer for 30 minutes, when ready, unwrap and slice wafer thin on a little olive oil bread
