Herefordshire Cider Cake



Preparation Time: 15 -20 mins
 
Notes: A few thin slices of cheshire cheese placed in the middle of this cake before cooking works incredibly well .
 
Ingredients:

125g unsalted butter

125g castor sugar 

2 fresh free range eggs 

225g self raising flour (sifted)

1 teaspoon bicarbonate soda 

½ teaspoon grated nutmeg 

220ml dry cider or scrumpy 

2 tablespoons Roman Vinaigre 
 
Method:

Method
1. Cream together the butter and sugar until lightly fluffy 

2. Beat in the eggs 

3. Sieve together the flour and bicarbonate soda 

4. Fold in half the amount of flour 

5. Add the nutmeg 

6. Pour over the cider and Roman Vinaigre and mix thoroughly

7. Stir in the remaining flour 

8. Pour the mixture into a greased tin 

9. Place into a preheated oven at 180°C (350°F), gas mark 4 for around 35-38 mins 

10. Leave to cool before cutting and serving
