Shallot and Ale-Gar Dressing

Ingredients 
8 small shallots, peeled and thinly slices

300ml virgin olive oil

300ml walnut oil 

100ml Ale-Gar 

4 sprigs fresh thyme 

12 black peppercorns 

3 cloves garlic, crushed 

1 bay leaf 



 
Method:

Method 
1. Warm the olive oil and walnut oil together, remove from heat 

2. Place all the remaining ingredients in the oil and leave to infuse until cool 

3. Pour into a bottle and close 

4. Place in a cool dark area for a week, preferably before using 

5. Shake the dressing once a day, drain and store in the refrigerator
