Simple Mango Chutney with Ale-Gar

Ingredients:

Ingredients 
1kg mangoes (fresh) not over ripe, skin & stone removed 

1 teaspoon salt 

450ml Ale-Gar 

450g brown sugar

2 teaspoons fresh peeled and grated root ginger

2 teaspoons chilli powder 

2 cloves of garlic, crushed

175g raisins 

175g dates, stoned 

3 sticks of cinnamon 
 
Method:

Method 
1. Dice the flesh of mango and place into a bowl 

2. Bring the sugar and Ale-Gar to the boil stirring occasionally until the has dissolved, simmer for 5 mins 

3. Add the cinnamon sticks 

4. Add the diced mango and stir

 5. Add the salt

6. Add the ginger, garlic, chilli, raisons and dates and bring to the boil 7. Reduce the heat and cook for 45 mins to 1 hour 

8. Remove from heat and leave to cool 

9. Remove the cinnamon sticks and spoon into sterilised jars and seal 10. Leave for preferably a week to mature
